Jambalaya

I made this in the Crock Pot and let it cook while we were at church today. Since Darren doesn't eat anything with cheese or that is creamy, I have started trying new meals. This one was delish. I have a great cookbook with healthy meals for the slow cooker and it is the best for us while we are at work, school, and church. Love it. This is so easy and you'll love it. Here's the recipe:

Prep Time: 20 minutes
Cook Time: 7-8 hours on Low, 3-4 hours on High
  • 1 pound skinless, boneless chicken breast halves-cut into 1 inch cubes
  • 1 pound andouille sausage, sliced
  • 1 (28 ounce) can diced tomatoes with juice
  • 1 large onion, chopped
  • 1 large green bell pepper, chopped
  • 1 cup chopped celery
  • 1 cup chicken broth
  • 2 teaspoons dried oregano
  • 2 teaspoons dried parsley
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon cayenne pepper (ours came out really spicy, for mild add only a half tsp.)
  • 1/2 teaspoon dried thyme
  • 1 pound frozen cooked shrimp without tails
  • 3 cups of rice
In the slow cooker, mix everything EXCEPT the shrimp and rice. Cover, and cook. Stir in shrimp during the last 30 minutes of cook time. Serve over rice. Enjoy!

It makes enough for about 6 people. Very scrumptious!
